Betty's Chilly Day Hot Spiced Apple Cider RecipeMay 18, 2012
In this video, Betty demonstrates how to make her Hot Spiced Apple Cider. Its getting just the right time of year here in Kentucky when a nice, hot drink is appealing. This Hot Spiced Apple Cider is flavored with cinnamon, nutmeg, allspice, and cloves. You can make it with either apple cider or apple juice. Its great for children, too! Ingredients: 2 quarts apple cider (You may substitute apple juice, if you prefer.) ½ cup firmly packed light brown sugar 2 whole nutmegs 4 cinnamon sticks 16 whole cloves 16 whole allspice In a large saucepan, combine 2 quarts apple cider (or apple juice) and ½ cup brown sugar. Tie spices (2 whole nutmegs, 4 cinnamon sticks, 16 whole cloves, and 16 whole allspice) in a cheesecloth bag; crush with a mallet, and add to the saucepan. Bring to a boil. Reduce heat and simmer for 15 minutes. Remove spice bag, and ladle Hot Spiced Apple Cider into mugs and serve. This Hot Spiced Apple Cider tastes great with Bettys Pumpkin Molasses Muffins, and the two make a perfect combination during fall, winter, and early spring! Cheers!

In this video, Betty demonstrates how to make Seasoned Hot and Spicy French Fries. These are great with a grilled steak or burger—also a terrific Super Bowl party dish! Ingredients: uncooked white potatoes, peeled and sliced for French fries (I used Russet potatoes, but you may use any type of white potato.) 1 teaspoon salt cornstarch, as needed egg wash, made from lightly beating two eggs and adding ¼ cup water spice mix (1 tablespoon seasoned pepper, ¼ teaspoon ground cayenne pepper, ground sea salt to taste. You may substitute freshly ground black pepper, if you do not have seasoned pepper.) fine, dry bread crumbs, as needed 1 inch peanut oil in heavy pot Place uncooked, sliced potatoes in a pot with enough water to cover them. Add 1 teaspoon salt. Bring to boil over high heat. Reduce heat and cook about 5 minutes, but not until tender. Drain potatoes and rinse with cold water, patting dry with paper towel. Cover potatoes with plastic wrap and refrigerate. When ready to deep fry, assemble the following line-up: 1) Place potatoes on a rack over a tray. 2) Place an adequate amount of cornstarch to coat the potatoes in a bowl beside the potatoes. 3) Make an egg wash by lightly beating 2 eggs and adding ¼ cup water. 4) Make spice mix with 1 tablespoon seasoned pepper, ¼ teaspoon ground cayenne pepper, and a grinding of sea salt, to taste. 5) Place an adequate amount of fine, dry bread crumbs to cover the potatoes in a shallow bowl at the end of the line-up. Mila and I make hot spicy fish soup with vegetables that I'm sure you'll enjoy! Full recipe: www.maangchi.com servings. Total cooking hours: 1-1½ hours. Ingredients: a red snapper (25 cm long), 4 clams, 4 large shrimp, Korean radish, 2 shiitake mushrooms, water,kelp, fish sauce, salt, minari (water dropwort), enoki mushroom, ssukgat (edible chrysanthemum), green onions, green chili pepper, red chili pepper, half an onion, cooking wine, ginger. Make stock first! 1. Soak 2 shiitake mushrooms in warm water for 3-4 hours and cut them into bite size in length. 2. Soak 4-5 clams in cold salty water (2 cups of cold water +1 tbs salt) for at least 3-4 hours and wash them and set them aside. 3. Cut radish thinly into about 3×4 cm size, 0.2-0.3 cm in thickness. 4. Place the sliced radish (about 1 cup), the pieces of mushroom, and some kelp in a pot. 5. Pour 6-7 cups of water into the pot and boil it over high heat for 20 minutes. Make maeuntang sauce: 1. Place 7 cloves galic, ½ medium size onion, ½ tbs ginger, 2 tbs cooking wine (or soju), 2 tbs hot pepper flakes, 1 tbs hot pepper paste, 2 tbs fish sauce in the food processor and grind it for about 1 minute. 2. Set it aside. Prepare fish: 1. Put a red snapper on a cutting board and clean out guts, remove scales and fins. In this video, Betty demonstrates how to make Hot and Spicy Peanuts. These are great for a game day party, or just for munching on while watching a movie. Ingredients: 2 teaspoons extra virgin olive oil 2 cups unsalted peanuts (You may use other types of nuts, if you prefer.) 2 teaspoons chili powder ¼ teaspoon ground red pepper ½ teaspoon garlic salt In a large mixing bowl, combine 2 cups unsalted peanuts, 2 teaspoons olive oil, 2 teaspoons chili powder, and ¼ teaspoon ground red pepper. Mix until all peanuts are well-coated. Place in a single layer in a 13-inch by 9-inch by 2-inch Pyrex dish. Bake in a 300-degree oven for 20 minutes, stirring halfway through. Remove from the oven. Sprinkle ½ teaspoon garlic salt (or more) over peanuts, and toss to combine. Drain peanuts on paper towels, and add a little more garlic salt, if desired. Cool completely before serving. You may store these in a tightly covered container at room temperature. These are hot and flavorful; you may adjust the seasonings to your own taste. Enjoy!!! --Betty
